Ok, so I know that I said I would be starting with blogging about some of my famous pasta sauces but thought I would throw this pork dish in between to change it up a bit! This is a creation from me that was very popular in my restaurant. Be sure to use a nice cut of pork for tenderness. Mangia!
1 cup Parmesan cheese (grated)
1/2 teaspoon salt
1/4 cup bread crumbs
2 eggs (beaten)
2 tblsp water
4 center cut pork chops
1 tblsp pure olive oil
1 Head garlic (peeled and chopped)
2 tblsp pure olive oil
4 tblsp base sauce (found in prior recipes in my blog)
1 tblsp parsley (fresh or dried, chopped)
In a mixing bowl, add the parmesan cheese, salt, and breadcrumb. Mix well
In another mixing bowl, add the egg and water. Mix well
In a frying pan, heat the 1 tblsp pure olive oil on medium.
Place one pork chop at a time into the egg mixture then into the parmesan cheese mixture to coat well. Add the chops to the frying pan with the oil. Sear on all sides. Pan fry until cooked, turning from side to side. Leave a little pink in the pork. Be careful not to dry them out. Remove to a plate.
In the same frying pan, add the 2 tblsp pure olive oil and the chopped garlic. While scraping the leftover goodness from the chops in the frying pan, saute the chopped garlic until translucent. Immediately pour this bubbling mixture over the cooked pork chops.
Sprinkle each chop with the base tomato sauce. Sprinkle with parsley. Serve
